Green avocado salad

A salad can be a healthy, satisfying meal on its own or a perfect side dish. The great thing about a salad is that you can use as many ingredients as you want: vegetables, fruits, nuts, seeds, cheese, etc. Salads are rich in fiber, vitamins, antioxidants and they are easily digestible. I love them.

Today I made a green avocado salad. Avocados are packed with nutrients and healthy fatty acids.
Here's your shopping list :)


  • 2 cups rucola with red beets
  • 1 cup baby spinach leaves
  • 1 cup kiemagro sprouts
  • 1 avocado
  • 1/2 cucumber 
  • 1 cup sun dried tomatoes
  • 1/2 cup chopped walnuts
  • 1 tbsp extra virgin olive oil
  • 1 tbsp walnut oil
  • Oregano herbs
  • pinch of sea salt
  • grated Grana Padano cheese

Who says eating healthy has to be boring?
