Summer Quinoa Salad - part II
I loved the
Summer Quinoa Salad
I made last week, I decided to make a new portion so I can enjoy this healthy lunch at work during the week. I used a few extra ingredients to make it even more nutritious.
This time I added:
Quinoa (proteins!)
Mango
Avocado (healthy fats!)
Red pepper
Carrots
Red beans (proteins!)
Spinach leaves
Cayenne pepper
Herbal salt
Extra virgin olive oil
