Sweet potato, baked tofu & cherry tomatoes

So simple, so delicious, so healthy.
Sweet potato with baked tofu & cherry tomatoes.

All you need is:
  • Sweet potato
  • Tofu
  • Cherry tomatoes
  • Tamari soy sauce
  • Rosemary
  • Oregano
  • Thyme
  • Sea salt
  • Extra virgin olive oil
I baked the sweet potato in the oven for 45 minutes on 200°C, covered in a little extra virgin olive oil and a pinch of sea salt. Yum!
